I found this adorable idea over at Twiggle Box Blog a few days ago and knew I needed to make them for the little Leprechauns in my life!
I couldn't find green licorice but the green sugar crystals worked alright, and no tiny clover candies so I improvised with candy dots; using yellow as the hat buckle. I also didn't make my marshmallows as nice and smooth as Hollie did, but I was really just trying to not make a mess! Ha! That's impossible with this treat....but in a good way!
You will need:
-Keebler Fudge Stripe Cookies (I used 20....but you can make more!)
-Marshmallows
-Chocolate Chips (your pref on sweet or semi)
-Toothpicks or skewers
-Knife or spatula
-Double boiler or reliable microwave
-wax paper
-green licorice or green sugar crystals
-candy shamrock or other small candy item for center (m&ms would work well)
1. Melt the chocolate in your double boiler or microwave. (I prefer double boiler simply because I can control how hot the chocolate gets.)
2. Meanwhile, lay out your cookies on a sheet of wax paper.
3.Using your toothpick, dip the marshmallow into the chocolate using a spatula or knife to smooth.
4. Place the marshmallow on the cookie so that the melted chocolate adheres the marshmallow on to it.
5. You can add more chocolate to the top with a knife or a small dab from the spatula once it is on the cookie.
6. Allow the chocolate to harden. I stuck mine in the freezer for 10-20 minutes although this made them sweat when I got them out. Hey. I'm impatient!
7. I used the left-over chocolate from the double boiler and put it in my Pampered Chef icing squirter thing. I'm sure it has a proper name.
8. I added a thin line of additional chocolate at the base of the marshmallow and then sprinlked the green sugar over it.
9. Add the buckle accent while that chocolate is still soft...right over your green sprinkles.

I bet a rolo in place of the marshmallow would work just as well. I might make some for St. Patty's.
You can also use Hershey's Kisses & orange frosting on the top of those cookies to make witches hats.
And you can use Mini Reese's and white frosting to make Pilgrims hats.
That is so stinkin' cute...and it's making me want to dive into some chocolate. No wonder I can't lose this 20 pounds. I bet it's sooooo yummy!
